Savory Cheese and Olive Muffins

Recommended to be baked in silicone cupcake pans each muffin being 3.5 cm (1.4 inches) across and 3.5 cm deep or in aluminum cupcake pans makes 50 mini muffins


350 gram. (2 ½ cups) of sifted self-rising flour

600 ml. (2 ½  cups) milk

5 eggs

5 tablespoons canola oil

100 gram green olives chopped

3 cloves garlic minced

160m gram grated Caciocavallo cheese

100 grams grated Bulgarian cheese

Oil spray for silicone baking pan


Preheat oven to 160C or 320F

In a wide mixing bowl place milk eggs, oil and garlic and mix well

Add flour mixing the whole time and then add the remaining ingredients

With a spoon fill each cupcake cup ¾ full

You can garnish each muffin with a slice of goat cheese and sunflower seeds before baking

Bake for 20-25 minutes or until golden brown
