If I performed a mitzvah of immersion on Monday and it was valid, the next day I checked and everything was fine also in the following days.
On which day should I immerse, the first or second?
Does the immersion count?

You immerse on the day of the mitzvah, in your case - on Monday evening.
The check on the day of the mitzvah is done before sunset, and thereafter you count seven complete days. That night you immerse.
This means, for example, in your case: you performed the mitzvah on Monday before sunset, you count seven complete days, and every day you perform a check in the morning and a check in the evening before sunset, and at the end of the seven days, on the following Monday, you immerse after the stars appear.
