A Pot Full of Flavor: Fish Simmered in Green Herb Sauce

There are countless ways to prepare fish, but this vibrant green herb sauce is one of the most flavorful. Slow-cooked until tender, the fish absorbs all the rich flavors of the herbs, garlic, and ginger, creating a dish that's both fresh and deeply satisfying.

One of the best things about this recipe is its flexibility. You can use your favorite herbs or combine several together. Cilantro, parsley, dill, chives, celery leaves, and even mint all work beautifully. If you're a cilantro lover, feel free to make it the star of the dish.

Ingredients

For the Green Herb Sauce:

  • 1 bunch scallions, thinly sliced
  • 1 teaspoon turmeric
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 to 2 bunches cilantro (or a combination of fresh herbs), washed and checked for insects
  • 2 slices fresh ginger root

For the Base:

  • 2 tablespoons olive oil
  • 1/2 cup grated tomato
  • 10 garlic cloves, crushed

For the Fish:

  • 1 whole fish or 2 to 3 pounds fish fillets

Instructions

Prepare the Herb Sauce

Place the scallions, turmeric, vinegar, salt, sugar, cilantro, and ginger in a blender or food processor.

Blend until a smooth green sauce forms.

Build the Sauce

Heat the olive oil in a large, deep skillet or wok over medium heat.

Add the grated tomato and crushed garlic and sauté for several minutes until fragrant.

Pour in the green herb sauce and continue cooking until the mixture begins to thicken.

Cook the Fish

Add 1/2 cup boiling water to the sauce and stir.

Carefully place the fish into the pot, making sure it is coated with the sauce.

Cover and cook over low heat until the fish is fully cooked and tender, about 45 to 60 minutes, depending on the size and thickness of the fish.

Serving Suggestion

Serve hot with challah, rice, couscous, or crusty bread to soak up every last bit of the flavorful green sauce.
