This sweet-and-savory rice dish combines tender white rice with dried apricots, prunes, raisins, and warm spices for a flavorful side that pairs beautifully with chicken, meat, or holiday meals.

Ingredients

  • 8 pitted dried prunes

  • 6–8 dried apricots

  • 3 cups boiling water

  • 2 cups white rice

  • 2 garlic cloves, minced

  • 1 onion, finely chopped

  • ½ cup raisins (a mix of dark and golden raisins is recommended)

  • ½ teaspoon cinnamon

  • 1 teaspoon salt

  • Black pepper, to taste

Instructions

1. Sauté the Onion

Finely chop the onion.

Heat a little oil in a large pot and sauté the onion until lightly golden and translucent.

2. Add the Dried Fruit

Meanwhile, cut the dried apricots and prunes into small cubes.

Add them to the pot along with the raisins and stir for about 30 seconds.

3. Add the Rice and Seasonings

Add the rice, garlic, cinnamon, salt, and black pepper.

Stir everything together for about 1 minute to coat the rice with the flavors.

4. Cook the Rice

Pour the boiling water over the mixture and bring it back to a boil.

Reduce the heat to low, cover the pot, and cook for approximately 20 minutes without lifting the lid.

5. Let It Rest

Turn off the heat and leave the pot covered for an additional 10 minutes.

Fluff the rice gently with a fork before serving.
