This savory sweet potato and onion bake is simple, wholesome, and packed with flavor. Made with caramelized onions, tender sweet potato ribbons, fresh parsley, and a light batter, it's perfect as a side dish, brunch option, or light vegetarian meal.

Ingredients

  • 4 tablespoons oil

  • 2 onions

  • 2 eggs

  • 1 large sweet potato

  • 1 teaspoon baking powder

  • ½ cup flour (whole wheat flour can be used)

  • ½ cup chopped parsley

  • Salt and black pepper, to taste

Instructions

Prepare the Vegetables

  1. Finely chop the onions.

  2. Heat the oil in a large skillet and sauté the onions until golden brown.

Meanwhile:

  1. Peel the sweet potato.

  2. Continue peeling it into thin ribbon-like strips using a vegetable peeler.

Cook the Sweet Potato

  1. Add the sweet potato ribbons to the skillet with the onions.

  2. Cover the skillet and cook for about 7 minutes, until the sweet potato softens.

  3. Transfer the vegetables to a bowl and allow them to cool to room temperature.

Prepare the Batter

  1. Add the eggs, baking powder, flour, chopped parsley, salt, and black pepper to the cooled vegetable mixture.

  2. Mix thoroughly until well combined.

Bake

  1. Transfer the mixture to a greased baking dish.

Optional: Use a muffin tin to create individual mini bakes.

  1. Bake for 30–45 minutes, depending on the size and depth of the baking dish, until golden and set.
