The Perfect Tu Bishvat Treat: No-Bake Fruit and Nut Cake Pops
These festive no-bake Tu Bishvat cake pops are made with dates, figs, dried fruit, nuts, and coconut for a delicious holiday dessert everyone will love.

These no-bake cake pops combine naturally sweet dates, figs, dried fruit, and roasted nuts into a festive dessert that's as beautiful as it is flavorful.
Served on cinnamon sticks for an elegant presentation, they're packed with the classic flavors of Tu Bishvat and make a wonderful addition to a holiday dessert table, family gathering, or children's celebration.
Ingredients
- 20 cinnamon sticks
- 15 Medjool dates, pitted
- 10 dried figs
- 10 biscuits or tea cookies
- 4 tablespoons high-quality chocolate spread
- 2 teaspoons rum extract
- 1/2 cup shredded coconut
- 1/2 cup roasted mixed nuts (almonds, pistachios, and hazelnuts work especially well)
- 1/3 cup dried apricots
- 1/3 cup dried papaya
- 1/3 cup raisins
Directions
Place the dried apricots, papaya, and raisins in a bowl of warm water and soak for about 20 minutes. Drain thoroughly.
If using raw nuts, roast them until lightly golden and fragrant.
Transfer the nuts to a food processor and pulse a few times until roughly chopped. Set aside half of the nut mixture for coating the cake pops later.
Add the remaining nuts to the food processor along with the biscuits and process until combined.
Add the soaked dried fruit, dates, figs, rum extract, and chocolate spread. Process until a soft, uniform mixture forms.
Mix in half of the shredded coconut. If the mixture feels too sticky, gradually add more coconut until it reaches a soft, workable consistency.
Using your hands, form the mixture into small balls.
Roll each ball in the reserved chopped nuts or the remaining shredded coconut.
Insert a cinnamon stick into each ball to create a cake pop.
Place the finished cake pops on a tray and refrigerate for about one hour before serving.
