How many hours should one wait after eating fries fried in meaty oil?
Question
If I fried schnitzel in oil, and in that same oil separately fried fries, do I need to wait six hours after eating the fries before I can eat dairy?

One must wait six hours in order to be permitted to eat dairy.
Sources: According to what is explained in the Rema Yoreh De'ah (Section 89, Clause 3), one must wait after consuming a meaty dish just as after eating meat.
Additionally, Sephardim should act in the same way, and even though the Shulchan Aruch there states that if one has eaten a meaty dish, one is permitted to eat cheese afterward provided one washes one's hands. Nevertheless, in the Beit Yosef Orach Chaim (Section 181) it is written that the custom of the world is not to eat cheese after a meaty dish at all, and one should not breach this fence.
And see Birkei Yosef in Shiyurei Berachah Yoreh De'ah (Section 89, Note 25) which brings from the Haganah Veridim part Yoreh De'ah (Section 1, Clause 15) that Maran (the author of the Shulchan Aruch) retracted in the Shulchan Aruch and left it lenient, and wrote about this: I find it hard to believe that he retracted, as this applies only if there was no custom, but now that it is customary due to a fence, and it is a common custom in the world, there is no room for retraction.
Thus it is also stated in the Knesset Hagedolah part Yoreh De'ah (Section 89 in the glosses of the Tur Note 42), and the Shulchan Gavoah (there, Subsection 18), and the Zevach Tzedek (there, Note 31), and the Ben Ish Chai (Year 2, Parashat Shelach, Note 9) that this is the custom. And it is likewise in the Kaf Hachaim Orach Chaim (Section 181, Note 1) and Yoreh De'ah (Section 89, Note 55).
It is also cited similarly in Responsa Divrei Binyamin part 22 (Section 59) and part 25 (Section 43) - as long as there is not sixty times the amount of oil against the schnitzels.
