It is permitted to warm a soufflé on the hotplate on Shabbat, even though the chocolate turns into liquid after being heated, unless you are accustomed to warming other foods on the hotplate only on top of an inverted pot and the like, in which case that practice should also be followed here.
Sources: According to the custom of the Sephardim, it is straightforwardly permitted, based on the ruling of the Shulchan Aruch (Orach Chaim, siman 318, se'if 16), that it is permitted to place an empanada near the fire in a place where the hand recoils, even though the fat in it, which had congealed, melts again.
However, even according to the custom of the Ashkenazim, who were accustomed to be strict in this because of the prohibition of nolad, except in a case of need, as explained in the Rama and the Mishnah Berurah there, nevertheless it is written in Sefer Shemiras Shabbos Kehilchasah, part 1 (chapter 1, note 123), in the name of Rabbi Shlomo Zalman Auerbach zt"l, that a food that is customarily eaten even while still solid, such as fish brine, may be thawed on Shabbat, because it was food before and it is food now as well, and therefore the prohibition of nolad does not apply here.
