While white bread is a staple in many households, it's not the healthiest option. It lacks essential nutrients, doesn’t keep you full for long, may lead to diabetes, and contains additives and preservatives. But now, Dr. Rajan has unveiled a method to make store-bought white bread healthier.
According to him, freezing sliced bread, then defrosting and toasting it can reduce the glycemic index of a slice by 50 percent. The glycemic index ranks foods by how they affect blood sugar levels within two hours after consuming 50 grams of carbohydrates from the tested food. Low glycemic index foods release sugar slowly into the bloodstream, keeping you fuller longer. Low glycemic foods include legumes, apples, pears, yogurt, and milk. Medium glycemic foods include pasta, brown rice, white rice, white sugar, honey, oats, grapes, raisins, and ice cream. High glycemic foods include white bread, baked potatoes, cornflakes, and popcorn.
Dr. Rajan explains that lowering the glycemic index of bread means "it breaks down more slowly, causing a more gradual rise in blood sugar levels." He states, "If you take a slice of white bread, freeze it, then defrost it and toast it, you can reduce the glycemic index of the bread by almost half."
