Crêpe Lasagna With Cheese and Spinach

For the Crêpe Layers

  • 1 1/4 cups milk
  • 3/4 cup all purpose flour
  • 2 large eggs
  • 2 tbsp melted butter
  • 2 tbsp finely grated Parmesan, optional
  • 1/2 tsp salt
  • Small amount oil, for the pan

For the Filling

  • 3.5 tbsp butter
  • 18 oz spinach, fresh or frozen and chopped
  • 7 oz grated feta cheese
  • 3.5 oz soft white cheese
  • 2 eggs
  • 3.5 oz grated Parmesan or shredded cheese
  • 1/2 tsp salt
  • Pinch nutmeg

Make the Crêpes

Add all the crêpe ingredients to a blender, food processor, or bowl and blend until smooth.

Heat a lightly greased skillet over medium heat.

Pour in batter and cook slightly thicker crêpes until both sides become lightly golden.

Transfer to a plate and allow to cool.

Make the Filling

Melt the butter in a skillet.

Add the spinach and sauté for about 3 minutes.

Remove from heat and drain any excess liquid.

Transfer the spinach to a bowl and add the feta, white cheese, eggs, Parmesan, salt, and nutmeg.

Mix until fully combined.

Assemble the Lasagna

Preheat the oven to 350°F.

Place one crêpe into a baking dish.

Spread about one quarter of the filling over the top.

Place another crêpe on top and continue layering until all the crêpes and filling are used.

Bake for about 15 minutes.
