Savory Beef Blintzes With Dried Fruit and Pine Nuts
What You’ll Need
For the Blintzes
- 1 cup all purpose flour
- 2 eggs
- 1 1/4 cups water
- Pinch of salt
- 1 tbsp oil
For the Filling
- 9 oz ground beef
- 1 small onion, finely chopped
- 2 tbsp pine nuts
- 2 tbsp chopped dried fruit such as raisins, cranberries, or dried apricots
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Pinch of cinnamon, optional
For Serving
- Seasoned tomato sauce
- Tahini
- Extra toasted pine nuts, optional
How to Make It
Prepare the Blintzes
In a mixing bowl, whisk together the flour and salt. Add the eggs and water, stirring until you have a smooth, thin batter.
Heat a small nonstick skillet with a little oil over medium heat. Pour in a small amount of batter and swirl the pan to create a thin layer.
Cook for about 1 minute per side, until lightly golden. Repeat with the remaining batter.
Prepare the Filling
Heat the olive oil in a skillet over medium heat. Sauté the onion until soft and golden.
Add the ground beef and cook until browned and fully cooked through.
Stir in the pine nuts and dried fruit. Season with salt, black pepper, and cinnamon if desired. Cook for another 2 to 3 minutes so the flavors combine well.
Fill the Blintzes
Place a spoonful of filling in the center of each blintz. Fold in the sides and roll into a neat log shape.
Pan Fry or Bake
For crisp golden edges, lightly pan fry the filled blintzes in a little oil until golden on both sides.
You can also place them on a baking sheet and bake in a preheated 350°F oven for 10 to 15 minutes.
Serve and Enjoy
Serve the blintzes hot with warm tomato sauce, drizzled tahini, and a few extra toasted pine nuts on top for added flavor and crunch.
