Ingredients

For the Salad

  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil or sesame oil
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced scallions
  • 1/3 cup roasted peanuts or cashews
  • Toasted sesame seeds, for garnish

For the Dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar or fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 garlic clove, crushed
  • Pinch of freshly grated ginger

Directions

Preheat the oven to 400°F.

Place the sweet potato cubes on a baking sheet and toss with the oil, salt, and black pepper. Roast for 25 to 30 minutes, or until the sweet potatoes are tender and lightly browned around the edges.

Meanwhile, prepare the dressing. In a small bowl, whisk together the soy sauce, rice vinegar, honey or maple syrup, sesame oil, garlic, and grated ginger. Taste and adjust the flavors if needed. You can add a little extra honey for sweetness or more soy sauce for a deeper savory flavor.

Transfer the roasted sweet potatoes to a large serving bowl. Add the cilantro, scallions, and roasted peanuts or cashews.

Pour the dressing over the salad and toss gently until everything is evenly coated.

Sprinkle toasted sesame seeds on top before serving.

This salad can be served warm or chilled, and it tastes just as delicious the next day.
