Ingredients

1 whole chicken, or chicken thighs, drumsticks, or wings

2 carrots, sliced into rounds

2 zucchini, sliced into rounds

1 whole onion

4 potatoes, peeled and cubed

2 celery stalks, chopped

2 sweet potatoes, cubed

½ small butternut squash, or ¼ large squash, peeled and cubed

7 garlic cloves, peeled

Salt and black pepper, to taste

1 tbsp turmeric

Water, enough to cover the chicken and vegetables

Directions

Place the chicken in a large soup pot and cover with water. Bring to a boil and skim off any foam that rises to the surface.

Add all the vegetables except the garlic.

Season with salt, pepper, and turmeric, and stir well.

Return to a boil, then reduce the heat to low. Cover and simmer for about 1½ hours, until the vegetables are tender and the broth is rich and flavorful.

During the last 15 minutes of cooking, add the garlic cloves.

Taste and adjust the seasoning as needed.

Serve hot on its own, or with noodles or soup almonds.
