Date Filled Nut Cookies
Ingredients
- 7 ounces margarine
- 5 cups all purpose flour
- 2 tablespoons sugar
- 1 packet baking powder
- 1 cup water
- 1 cup oil
- A generous handful of chopped nuts, such as walnuts, pecans, or almonds
- Date spread
Directions
Cut the margarine into small cubes.
Place the margarine, water, oil, and sugar in a large bowl and mix well until combined.
Add the flour and baking powder and knead until a smooth, uniform dough forms.
On a lightly floured surface, roll the dough into a large rectangle.
Spread a generous layer of date spread evenly over the dough and sprinkle the chopped nuts over the top.
Starting from one edge, roll the dough tightly into a log.
Transfer the log to a baking sheet or baking pan.
Bake in a preheated 350°F oven for about 35 minutes, or until lightly golden.
Remove from the oven and allow to cool for 1 to 2 minutes.
While still warm, slice the log into cookies about 1 inch thick.
Allow the cookies to cool completely before serving.
