Baked Pineapple Chicken: A Sweet and Savory One-Pan Family Dinner

Ingredients
For the Chicken
10 pieces of chicken (wings, drumsticks, thighs, or a combination)
8 slices canned pineapple
3 potatoes
1 red bell pepper
For the Marinade
3 cloves garlic
2 tablespoons date syrup (silan)
1 tablespoon soy sauce
1 tablespoon olive oil
½ teaspoon salt
Freshly ground black pepper, to taste
Instructions
Crush the garlic and mix it with the date syrup, soy sauce, olive oil, salt, and black pepper to create the marinade.
Peel the potatoes and cut them into cubes.
Cut the red bell pepper into large chunks.
Arrange the chicken pieces on a large baking sheet lined with parchment paper.
Place the potato cubes, bell pepper pieces, and pineapple slices between the chicken pieces.
Pour the marinade evenly over everything, making sure all the ingredients are coated.
For best results, allow the chicken and vegetables to marinate for about 1 hour before baking.
Bake in a preheated oven at 180°C (350°F) for approximately 1½ to 2 hours, depending on the size and type of chicken pieces used.
Remove from the oven when the chicken is golden, tender, and fully cooked through.
Serve hot and enjoy the delicious combination of juicy chicken, caramelized pineapple, and roasted vegetables.
