Ingredients
35 g (1.2 oz) butter
100 g (3.5 oz) peeled chestnuts
3–4 sweet potatoes
3 tablespoons breadcrumbs (preferably coarse homemade breadcrumbs)
1 tablespoon lemon juice
½ cup cooking cream
½ tablespoon sugar
⅓ teaspoon thyme
¼ teaspoon black pepper
Salt, to taste
Instructions
Prepare the Sweet Potatoes
Peel the sweet potatoes and slice them into rounds about 1 cm (½ inch) thick.
Place the slices in a pot and add enough water to cover them.
Add 1 tablespoon of salt and bring to a boil.
Cover the pot and cook over medium heat for 6–8 minutes.
The sweet potato slices should be tender but still hold their shape without falling apart.
Drain all the water immediately after cooking.
Add Butter
Cut 30 g of the butter into small cubes.
Scatter the butter over the hot sweet potatoes.
Allow it to melt completely.
Prepare the Baking Dish
Grease a Pyrex or similar baking dish with the remaining butter.
Sprinkle 1½ tablespoons of breadcrumbs evenly over the bottom of the dish.
Arrange the Sweet Potatoes
Cut all the chestnuts in half.
Arrange the sweet potato slices neatly in the prepared baking dish.
Sauté the Chestnuts
Reheat any remaining butter left in the pot.
Add the chestnut halves and sauté until lightly golden, stirring constantly.
Scatter the chestnuts over the sweet potatoes.
Sprinkle the thyme evenly on top.
Prepare the Cream Sauce
In a separate bowl, whisk together:
Cooking cream
Sugar
Black pepper
A pinch of salt
Lemon juice
Mix until smooth.
Assemble and Bake
Pour the cream mixture evenly over the sweet potatoes and chestnuts.
Sprinkle the remaining breadcrumbs over the top.
Bake in a preheated 180°C (350°F) oven until the breadcrumbs become lightly golden.
