The eve of Yom Kippur is one of the most special moments on the Jewish calendar. It is a time when both body and soul prepare together for 25 hours of fasting, prayer, and spiritual reflection.

To make the fast more comfortable and manageable, it is important to give careful thought to the final meal beforehand, known as the Seudah Hamafseket (the pre-fast meal). It's not only about what we eat, but also how we eat it — how much seasoning we use, how much food we consume, and how gentle the meal is on the digestive system.

Spicy, heavily seasoned, or overly salty foods can increase thirst and place unnecessary strain on digestion, making the fast significantly more difficult.

The purpose of the Seudah Hamafseket is to provide a feeling of steady, moderate fullness without weighing the body down. For that reason, the best choices are simple, well-cooked foods with mild flavors.

In my Moroccan family, my mother — and many others like her, traditionally prepares a simple menu for the pre-fast meal that includes boiled chicken, potatoes, noodles, and rice. Occasionally, roasted vegetables or another meat dish may be added, but the guiding principle remains the same: keep the seasoning light to avoid unnecessary thirst.

In other words, this meal stands at the intersection of body and soul. It calms, balances, and allows us to enter the holiest day of the year with physical comfort and mental clarity.

Before heading into the kitchen to prepare your Seudah Hamafseket, remember: there is no need for rich, heavy, or highly seasoned foods. A gentle, cooked, easy-to-digest meal will sustain you throughout the fast without causing excess thirst or discomfort.

Boiled Chicken with Bay Leaves

Ingredients

  • 4 chicken leg quarters (or more, as desired)

  • 2 bay leaves

  • 1 onion, halved

  • Fine salt, to taste

  • 1 teaspoon turmeric

  • 1 teaspoon white pepper

  • 2 tablespoons canola oil

Instructions

  1. Place the chicken in a large pot and cover with water.

  2. Add the bay leaves, onion, salt, turmeric, white pepper, and oil.

  3. Bring to a boil, then reduce to medium heat.

  4. Cover the pot and cook for about one hour.

  5. If needed, add fresh water during cooking and adjust the seasoning accordingly.

The result is tender, easy-to-digest chicken with a delicate flavor that is ideal before a fast.

Noodles Cooked in the Chicken Broth

Ingredients

  • 1 package thin noodles

  • The cooking liquid from the boiled chicken (a mild broth)

Instructions

  1. Cook the noodles directly in the chicken broth, allowing them to absorb its gentle flavor.

  2. If desired, add a little extra seasoning:

    • About ¼ teaspoon turmeric

    • A small amount of salt

If you prefer rice instead of noodles, you can cook rice in the same chicken broth. The result is just as flavorful and comforting.

Gentle Boiled Potatoes

Ingredients

  • 4 medium potatoes

  • A small amount of fine salt

  • A few dried rosemary leaves

  • ¼ teaspoon turmeric

Instructions

  1. Peel and cut the potatoes into cubes.

  2. Place them in a pot with the salt, rosemary, and turmeric.

  3. Add enough water to cover.

  4. Cover the pot and cook over low heat until the potatoes are soft and tender.
