There are certain smells, foods, and memories that stay with us forever.

For me — and perhaps for many other children as well, one of those unforgettable comfort foods is rice or Israeli couscous with milk.

I remember it as if it were yesterday: three children — my younger siblings and I, coming home in the evening after playing with friends in the neighborhood. We were tired, sweaty, red-cheeked, and covered in dust. On a good day, we simply had sand in our shoes. On a less fortunate day, a shoe sole had mysteriously come loose, or we'd discovered a hole in our clothes because we hadn't paid attention to where we were sitting.

And then the day would begin to slow down.

The kitchen glowed with warm light. The three of us would take our baths and emerge clean and cozy, heading straight to the dinner that Dad, Nissim, had prepared: rice or Israeli couscous with milk — our favorite meal.

No other food takes me back so quickly to those simple, innocent years. Each of us enjoyed it differently — some with a spoonful of sugar, others with a pinch of salt.

Here are three classic, comforting recipes that bring back that nostalgic flavor and can introduce today's children to the same warm memories.

Rice with Milk

Ingredients

  • 1 cup white rice, rinsed

  • 2 cups water

  • 2 cups milk (or more if needed)

  • 1 teaspoon sugar or a pinch of salt

  • Butter (optional)

Instructions

  1. Cook the rice in water until it is almost fully cooked.

  2. Drain any remaining water and return the rice to the pot.

  3. Add the milk and either the sugar or salt.

  4. Cook over low heat, stirring frequently, until the rice absorbs the milk and develops a thick, creamy texture.

Serve warm.

For those who enjoy it, add a little cinnamon and butter on top.

As a child, I preferred mine with just a tiny pinch of salt and nothing more. To this day, I still don't care much for the sweet version.

Israeli Couscous with Milk

Ingredients

  • 1 cup small Israeli couscous (the classic round variety is ideal)

  • 1 tablespoon butter

  • 2 cups milk

  • 1 tablespoon sugar (or to taste)

  • A pinch of salt

Instructions

  1. Lightly toast the Israeli couscous in the butter until it develops a pale golden color.

  2. Add the milk, sugar, and salt.

  3. Stir and cook over low heat until the couscous softens and absorbs the milk.

Personally, I like this dish with only a small amount of milk and a rich buttery flavor.

My version is thicker and less saucy, but you can easily adjust the consistency to suit each child's preferences.

Couscous with Milk

Ingredients

  • 1 cup prepared couscous

  • 2 cups warm milk

  • 1 tablespoon sugar or honey

  • A little butter

Instructions

  1. Place the prepared couscous in a bowl.

  2. Pour the warm milk over it.

  3. Add the sugar or honey and the butter.

  4. Let it sit for a few minutes so the grains absorb the liquid.

The result is a soft, mildly sweet, comforting dish — a dairy twist on the classic North African staple.

Sometimes the simplest foods become the most cherished memories. A bowl of rice, Israeli couscous, or couscous with milk may seem modest, but for many families it carries something much bigger: warmth, comfort, and the feeling of being home.
