How to Make Them
Preheat the oven to 350°F (180°C).
In a large bowl, combine the flour, margarine, sugar, oil, water, baking powder, and vanilla extract or lemon zest. Knead until a soft, smooth dough forms.
Lightly flour a work surface and roll out the dough to about 1/4-inch (5 mm) thickness.
Using a cookie cutter or glass, cut out circles about 2½–3 inches (6–7 cm) in diameter.
Place a small spoonful of filling in the center of each circle. Fold the edges toward the center to form a triangle, pinching the corners gently to seal.
Arrange the hamantaschen on baking sheets lined with parchment paper.
Bake for 15–20 minutes, or until lightly golden around the edges.
Allow to cool completely. If desired, dust with powdered sugar before serving.
Baking Tip
For the best texture, avoid overfilling the cookies. A small amount of filling helps them keep their classic triangular shape while baking.
