Easy Zucchini Kugel for Pesach

Ingredients

  • 4 medium zucchini

  • 1 large onion

  • 1 1/2 cups matzah meal

  • 1 teaspoon baking powder

  • 3 eggs

  • 1/3 cup vegetable oil

  • 4 tablespoons mayonnaise

  • Salt and black pepper, to taste

How to Make It

Preheat the oven to 350°F (180°C).

Peel the zucchini and cut it into small cubes.

Finely chop the onion. Heat a little oil in a skillet and sauté the onion until softened and lightly golden.

Add the zucchini and continue cooking for several minutes, stirring occasionally, until the zucchini begins to soften. Remove from the heat and allow the mixture to cool slightly.

In a large bowl, combine the matzah meal, baking powder, eggs, oil, mayonnaise, salt, and black pepper.

Add the zucchini and onion mixture and stir until everything is well combined.

If the mixture seems too dry, add a tablespoon or two of water until it reaches a thick but spreadable consistency.

Transfer the mixture to a lightly greased baking dish and spread evenly.

Bake for 30–40 minutes, or until the top is golden brown and the center is fully set.

Allow the kugel to cool slightly before slicing and serving.

Serving Suggestion

Serve warm as a side dish with your favorite Pesach meal, or enjoy leftovers at room temperature the next day. It pairs especially well with roasted vegetables, fish, or a fresh Israeli-style salad.
