Rosh Hashanah Head Meat with Pomegranate and Apples

Head meat is more than just a symbolic holiday food. It is a celebration of flavor, tradition, and renewal. Combined with the sweet and tangy flavors of pomegranates and apples, this classic Jewish dish gets a modern twist that makes it a perfect centerpiece for any festive Rosh Hashanah table.

Ingredients

  • 1 kg (2.2 lbs) sliced head meat (ask your butcher for thick slices or large chunks). If using frozen head meat, cook it as is together with the remaining ingredients.

  • 1 large onion, chopped

  • 2 red apples, peeled and diced

  • 1 cup fresh pomegranate seeds (or thawed frozen pomegranate seeds)

  • ½ cup natural pomegranate juice (freshly squeezed or 100% juice)

  • ¼ cup honey

  • ¼ cup red wine (or substitute beef broth or water for an alcohol-free version)

  • 3 tablespoons olive oil

  • 2 garlic cloves, sliced

  • 1 teaspoon cinnamon

  • ½ teaspoon cumin

  • Salt and black pepper, to taste

  • ½ teaspoon sweet paprika

  • A pinch of nutmeg (optional)

Instructions

Brown the Meat

Heat the olive oil in a large, heavy pot over medium-high heat. Brown the head meat on both sides until nicely seared. Remove from the pot and set aside.

Prepare the Flavor Base

Using the same pot, sauté the onion until translucent. Add the garlic, cinnamon, paprika, cumin, and nutmeg. Stir well and cook until fragrant.

Add the Fruit

Add the diced apples and pomegranate seeds, reserving a small amount of pomegranate seeds for garnish. Stir for about one minute.

Simmer Until Tender

Return the meat to the pot. Add the pomegranate juice, honey, red wine, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for approximately 2 hours, or until the meat is tender and melts in your mouth.

Serve

Transfer the meat to a serving platter and garnish with the reserved fresh pomegranate seeds.

Serve alongside white rice or couscous.
