Pan-Seared Tilapia with Spinach Cream and Artichokes

(Illustrative photo: Shutterstock)3 tilapia fillets, cut in half 1 kg (2.2 lbs) fresh spinach 1 large onion 6 asparagus spears 200 grams (7 oz) green beans 3 artichokes 1 lemon 3 garlic cloves, finely chopped Salt and black pepper, to taste A small amount of margarine Olive oil Wash the spinach thoroughly. Bring a pot of water to a boil and blanch the spinach for about 10 seconds. Immediately transfer the spinach to a bowl of ice water. Drain well and squeeze out as much excess water as possible. Finely chop the onion. Sauté it in olive oil until translucent. Add the chopped garlic and cook for another minute. Carefully add 2 tablespoons of water and continue cooking until all the liquid has evaporated. Transfer the onion mixture to the freezer and allow it to cool completely. Blend the spinach and cooled onion mixture together with a small amount of water until smooth and creamy. Season lightly with salt. Remove the tough outer leaves, leaving only the artichoke hearts. Cook the hearts in lightly salted water until tender. Remove the fuzzy choke from each heart and slice them lengthwise in half. Melt a small amount of margarine in a skillet. Sauté the asparagus, green beans, and artichoke hearts separately until tender. Season each vegetable with salt and black pepper. Heat olive oil in a separate skillet. Season the tilapia fillets with salt and pepper. Pan-sear until golden brown on both sides and cooked through. Fill each artichoke half with the spinach cream. Place a portion of fish on each serving plate. Add a stuffed artichoke half, a small serving of green beans, and an asparagus spear. Serve immediately.Ingredients
