As Passover comes to an end, the matzah supply is still going strong. The cardboard box is sitting open on the counter, and we're all asking the same question: What do we do with all the leftover matzah?

Before it becomes nothing more than a Passover decoration, following are four delicious, easy, and family-friendly ideas we found.

1. Sweet or Savory Matzah Brei

Break the matzah into pieces, soak it in water for about two minutes, and drain well. Mix with beaten eggs.

For a sweet version, add:

  • Sugar

  • Cinnamon

  • Raisins

For a savory version, add:

  • Salt

  • Black pepper

  • Fresh herbs

Cook it in a skillet like an omelet. It's simple, filling, and gives leftover matzah a completely new twist.

2. Matzah Pizza: The Leftover Edition

Lightly moisten a sheet of matzah and top it with:

  • Tomato sauce

  • Shredded cheese

  • Any leftover toppings you have on hand, such as olives, corn, or mushrooms

Bake for about 10 minutes, and you've got a crispy matzah pizza. Kids get excited about it as if it were the first pizza they've ever seen.

3. Chocolate Matzah Balls

Crush the matzah into fine crumbs and mix with:

  • Melted chocolate

  • A little butter or margarine

  • Shredded coconut

Roll the mixture into bite-sized balls and refrigerate for two hours. The result is an irresistible post-Passover treat that everyone will ask you to make again.

4. Use Matzah Crumbs Instead of Breadcrumbs

Store crushed matzah in an airtight container and use it long after Passover as a substitute for breadcrumbs.

It's perfect for:

  • Coating schnitzel

  • Meatballs and patties

  • Casseroles and baked dishes

The texture is light, crispy, and surprisingly versatile.

Leftover matzah can be transformed into breakfasts, snacks, desserts, and even everyday cooking ingredients. With a little creativity, you can turn those extra boxes into delicious meals that the whole family will enjoy, long after the holiday is over.
