4 Delicious Ways to Use Leftover Matzah After Passover

When Passover ends, we're left staring at stacks of leftover matzah, wondering what to do with them. Should we give them away, or try to come up with recipes the kids might actually enjoy?

Usually, I get tired just thinking about reinventing the wheel with creative matzah recipes, so I end up passing the unopened boxes to the first person willing to take them.

Last year, I made the fateful decision to keep one package "just in case" we felt like eating matzah after Passover.

In the end, I threw it away during my pre-holiday cleaning the following year. This time, though, I'm hoping these recipes will change everything.

Classic Matzah Brei

If you've never tried it, you're missing out.

Ingredients

  • 2 matzot

  • 2 eggs

  • A pinch of salt or sugar, according to your preference

  • 1 tablespoon oil

Instructions

Break the matzot into pieces and briefly soak them in water for a few seconds. Drain well by squeezing out the excess moisture with a clean kitchen towel, then transfer them to a bowl.

Mix the softened matzah with the eggs and your favorite seasonings. I personally love a savory version with bold spices such as hawaij for soup and chicken grill seasoning.

Fry in a lightly oiled skillet over medium heat until golden brown on both sides. Serve immediately while hot.

Quick Matzah Pizza

Who didn't miss pizza during Passover?

Ingredients

  • 1 matzah (lightly moistened if desired)

  • Tomato sauce

  • Grated mozzarella or yellow cheese

  • Your favorite pizza toppings

Instructions

Spread tomato sauce over the matzah and add your preferred toppings, just as you would with a traditional pizza.

Sprinkle generously with grated cheese and bake in a preheated oven until the cheese is melted and bubbling.

Matzah Lasagna

Ingredients

  • 3 matzot

  • Tomato sauce

  • Assorted cheeses

  • 1 egg

Instructions

Lightly moisten the matzot and arrange a layer in a baking dish.

Mix tomato sauce with any soft cheeses you have on hand, adding the egg to help bind the filling.

Spread part of the cheese mixture over the first layer of matzah, then continue building layers just as you would with traditional lasagna.

Bake until the top is golden and the filling is fully set.

Matzah Chocolate Truffles

Ingredients

  • Crushed matzah

  • Melted chocolate

  • A splash of milk or cream

  • Shredded coconut for coating

Instructions

Combine the crushed matzah, melted chocolate, and milk or cream until the mixture comes together.

Roll into bite-sized balls, coat each one in shredded coconut, and refrigerate for at least two hours before serving.

For extra flavor, add a few drops of rum extract to the chocolate mixture if you enjoy its rich aroma.
