2 medium zucchini, grated

4 eggs

Instructions
Preheat the oven to 350°F (180°C) and lightly grease a medium baking dish.
Grate the zucchini and squeeze out as much excess liquid as possible. This step is important to prevent the bake from becoming soggy.
Place the zucchini, grated carrots, chopped onion, diced bell pepper, and parsley in a large bowl.
In a separate bowl, whisk together the eggs and oil. Add the flour, baking powder, salt, and black pepper, mixing just until combined.
