We usually think of mango as something to enjoy in a smoothie, fruit salad, or dessert. But have you ever considered adding it to chicken curry? It might sound like an unusual combination, but a mango chicken curry recipe has recently been making waves on Australian social media, attracting nearly 10,000 user ratings and plenty of enthusiastic recommendations.

What makes this dish so special? The sweetness of ripe mango blends beautifully with creamy coconut milk, aromatic curry spices, and a refreshing splash of lime juice. The result is a rich, flavorful sauce with just the right balance of sweet, savory, and tangy flavors.

Best of all, the recipe is surprisingly simple to prepare. You can use fresh, ripe mangoes or drained canned mango, making it an easy dish to enjoy whenever the craving strikes.

Ingredients

  • 1½ pounds (700 g) boneless chicken thighs, cut into large cubes

  • 2 tablespoons oil, divided

  • 1 large onion, chopped

  • 3 garlic cloves, crushed

  • 1 teaspoon freshly grated ginger

  • 2 teaspoons curry powder (or 1 teaspoon for a milder flavor)

  • ½ teaspoon ground cumin

  • ¼ teaspoon turmeric

  • 1 cup mango puree (made from approximately 2 ripe mangoes or drained canned mango)

  • 1 can (about 13.5 oz) coconut milk or coconut cream

  • ½ cup water

  • 1 tablespoon freshly squeezed lime or lemon juice

  • ½ teaspoon salt

  • A pinch of black pepper

  • Chopped cilantro or parsley, for serving

How to Make Mango Chicken Curry

  1. Prepare the mango: Blend the mango flesh until smooth. If using canned mango, drain the syrup before blending.

  2. Brown the chicken: Heat 1 tablespoon of oil in a large, wide pot over medium-high heat. Add the chicken pieces and lightly brown them on both sides, working in batches if necessary. Transfer to a plate. The chicken does not need to be fully cooked at this stage.

  3. Cook the aromatics: Add the remaining tablespoon of oil to the same pot, followed by the chopped onion. Sauté for about 5 minutes, until softened and lightly golden. Add the garlic and ginger and stir for another 30 seconds. Sprinkle in the curry powder, cumin, and turmeric, stirring for about 20 seconds to release their aromas without burning the spices.

  4. Make the sauce: Pour in the coconut milk, mango puree, and water. Stir well, gently scraping the bottom of the pot to incorporate the flavorful browned bits left behind by the chicken.

  5. Simmer the chicken: Return the chicken to the pot, along with any juices that have collected on the plate. Bring the sauce to a gentle simmer, reduce the heat, and cook partially covered for 15–20 minutes, stirring occasionally, until the chicken is fully cooked. The internal temperature should reach 165°F (74°C).

  6. Finish and serve: Add the lime or lemon juice, salt, and black pepper. Taste and adjust the seasoning as needed. If the sauce is too thick, stir in a little water. If it's too thin, simmer uncovered for a few more minutes. Sprinkle with chopped cilantro or parsley and serve hot with white rice.

Want to Add Some Vegetables?

This curry is also a great way to incorporate extra vegetables into your meal. Diced bell peppers, frozen peas, grated carrots, and zucchini all work beautifully with the creamy mango sauce.

Simply add your chosen vegetables during cooking, allowing enough time for them to become tender. They'll bring extra color, texture, and flavor to an already delicious dish.
