Easy Garlic Lemon Honey Salmon
Ingredients
- 1.75 lb fresh salmon
- 4 tablespoons honey
- 4 tablespoons olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 handful finely chopped parsley
- 4 garlic cloves, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium lemon, sliced
Directions
Preheat the oven to 400°F and line a baking sheet or baking dish with parchment paper.
In a bowl, combine the honey, olive oil, lemon juice, parsley, garlic, salt, and black pepper until smooth.
Coat the salmon well on both sides with the marinade and place it in the center of the pan.
Arrange a few lemon slices on top for extra flavor and freshness.
Drizzle a little additional olive oil over the fish if desired.
Bake for about 15 minutes, or until the salmon is tender, juicy, and flakes easily with a fork.
Serve immediately.
Optional Summer Addition
This recipe also works beautifully with roasted vegetables added to the same pan. Zucchini, cherry tomatoes, asparagus, red onion, or thin potato wedges pair especially well with the lemon garlic flavors.
For best results, toss the vegetables lightly in some of the marinade before roasting them alongside the salmon.
