We’ve put together a simple, creative menu that works for everyone, and a small twist that makes each plate feel fresh and exciting. Everything comes together in 30 minutes (or less!).
Crispy Green Salad with Pears & Walnuts
Ingredients
Lettuce or baby greens
A handful of walnuts (roughly chopped)
1 pear, thinly sliced
Lemon juice, olive oil, coarse salt
Instructions
Toss everything together in a bowl and dress just before serving.
Fresh, crunchy, and beautifully refreshing.
Main: Herb Omelet Skillet
Ingredients
3 eggs
A handful of chopped parsley, dill, and green onion
Salt, pepper, a little oil
Instructions
Whisk the eggs with the herbs and seasoning. Pour into a preheated pan with a bit of oil.
Cover and cook for 2 minutes, flip, and cook for another 2 minutes.
Side: Quick Cheese Fritters
Ingredients
1 cup cottage cheese (about 250 g)
1 egg
1 tablespoon potato starch
A pinch of salt and sugar
Chef’s tip: Add 1 teaspoon almond flour for extra flavor.
Instructions
Mix everything in a bowl. Spoon small fritters into a nonstick pan and fry for about 2 minutes per side. Serve with fresh vegetables.
Quick Dessert: Chocolate & Nut Stuffed Dates
Ingredients
Medjool dates (best choice)
Melted dairy-free chocolate
Chopped nuts
Instructions
Open each date, fill with a spoonful of melted chocolate, sprinkle nuts on top, and place in the freezer for 5 minutes to set.
