Passover’s intermediate days (Chol HaMoed) bring not only outings and scenery, but also a challenge: what do you prepare for the kids to eat? No bread, no pita, and with endless appetites.
Following are three simple recipes that are kosher for Passover, and most importantly, ones kids will ask for again and again.
Note: These recipes are suitable for those who eat soaked matzah (gebrochts) during Passover.
1. Passover Pancakes (No Leavened Flour)
Ingredients:
2 eggs
1/2 cup mineral water
3 tablespoons fine matzah meal
1 tablespoon sugar
A little oil
Instructions:
Whisk all ingredients into a smooth batter. Heat a pan with a bit of butter or oil, pour in the batter, and cook for about a minute on each side.
Serve with maple syrup, honey, or Passover-friendly jam. Perfect for breakfast or dinner.
2. Quick Matzah Pizza
Ingredients:
Matzah
Tomato paste
Grated yellow cheese
Olives, corn, or favorite vegetables
Instructions:
Lightly moisten the matzah with water, place it on parchment paper, spread with tomato paste, and add cheese and toppings.
Bake in a hot oven for about 10 minutes, until the cheese melts. Kids will love it like it’s real pizza.
3. Chicken or Turkey Patties with Matzah Meal
Ingredients:
500 g ground chicken or turkey
1 egg
3 tablespoons matzah meal
1 grated onion
