One-Pot Comfort: Homemade Mejadra with Caramelized Onions

Classic Mejadra
Ingredients
- 1 cup basmati or Persian rice
- 1 cup green lentils
- 2 large onions
- 3 tbsp olive oil or neutral oil
- 1 tsp cumin
- 1/2 tsp turmeric, optional
- Salt, to taste
- Black pepper, to taste
- 2 cups water
Instructions
Cook the Lentils
Rinse the lentils well.
Place them in a pot with water and cook for about 15 minutes, until tender but still holding their shape.
Drain and set aside.
Caramelize the Onions
Thinly slice the onions.
Heat the oil in a large pot over low heat and cook the onions slowly for about 15 to 20 minutes, stirring occasionally, until deeply golden and caramelized.
Remove about half of the onions and set aside for serving.
Build the Flavor
Add the cumin, turmeric, salt, and black pepper to the onions remaining in the pot and stir well.
Add the rinsed and drained rice along with the cooked lentils.
Mix gently so everything becomes evenly coated with the spices and onions.
Cook the Mejadra
Pour in the water and bring to a boil.
Reduce the heat to low, cover the pot, and cook for about 15 to 20 minutes, until the rice is tender and the water is fully absorbed.
Turn off the heat and let the pot rest, covered, for another 10 minutes.
To Serve
Fluff the rice gently with a fork and top generously with the reserved caramelized onions.
Serve warm on its own or alongside salads, yogurt, roasted vegetables, or grilled meat.
