This wholesome vegan whole-wheat pizza combines a hearty homemade crust with a flavorful garlic tomato sauce and plenty of fresh vegetables. Whether you are looking for a fun family dinner or a healthier pizza night option, this recipe delivers all the comfort of classic pizza with a delicious plant-based twist.

What You'll Need

For the dough:

4 cups whole wheat flour, sifted

2 cups warm water

2 teaspoons sugar

2 teaspoons active dry yeast

1½ teaspoons salt

Olive oil, for greasing

For the sauce:

4 garlic cloves

3 tablespoons olive oil

A small amount of hot chili pepper

Tomatoes of several varieties such as regular, Roma, cherry, or others

Salt, to taste

Toppings:

Spinach leaves

Sliced shallot

Mushrooms, sliced and sautéed

You can also use a variety of additional toppings according to your taste.

How to Make It

Prepare the Dough

Add all the dough ingredients except the olive oil to a stand mixer.

Mix for 2 minutes, then let the dough rest for 2 minutes.

Mix again for 3 minutes, allow it to rest for another 3 minutes, and then continue mixing for 5 additional minutes.

Remove the dough and knead lightly by hand. The dough should feel very elastic and slightly sticky.

Generously grease a bowl with olive oil. Shape the dough into a ball, lightly coat it with oil, and place it in the bowl.

Cover tightly and allow the dough to rise for about 1 hour.

Meanwhile, place a baking stone on the bottom rack of the oven and preheat the oven to its highest setting. Let it heat for approximately 1½ hours.

Prepare the Sauce

Slice the garlic cloves and hot pepper.

Heat olive oil in a pot and sauté the garlic and pepper.

When the pepper develops a bright color, add the tomatoes whole.

Cover and cook for about 15 minutes.

Transfer everything to a fine sieve and strain. Remove and discard the tomato skins.

Return the sauce to the pot and continue cooking for another 5 minutes.

For a thicker consistency, add 2 tablespoons of tomato paste.

Remove from the heat even if the sauce still seems slightly loose.

Assemble the Pizza

Gently knead the dough to release air bubbles and divide it into 2 or 4 pieces, depending on your preferred pizza size.

Shape each portion into a small round and flatten gently with a rolling pin, taking care not to flatten the edges too much.

Lightly flour the surface or tool you will use to transfer the pizza to the oven and place the dough rounds on it.

Spread sauce over each pizza and top with spinach, shallots, mushrooms, and any additional vegetables you enjoy.

Bake directly on the hot baking stone for about 5 minutes.
