Ingredients
- 3.5 oz dark chocolate
- 5 carrots
- 3 golden apples
- 1 1/2 cups whole wheat flour, sifted
- 1 packet baking powder
- 1 cup brown sugar
- 1 teaspoon chopped fresh ginger
- 1 teaspoon cinnamon
- 3/4 cup oil
- 1/2 cup raisins
- 1/4 cup walnuts
- Pinch of nutmeg
Directions
Preheat the oven to 350°F.
Peel the apples and remove the cores. Place the apples in a food processor together with the oil, brown sugar, and chopped ginger. Process until smooth.
Peel the carrots and grate them using a coarse grater. Add the grated carrots to the apple mixture and stir well.
In a separate bowl, combine the whole wheat flour, baking powder, cinnamon, nutmeg, walnuts, and raisins.
Break the dark chocolate into small chunks and add it to the dry mixture. Mix everything together well.
Combine the wet and dry mixtures and stir until fully incorporated.
Transfer the batter into a well greased baking pan.
Bake for at least 1 hour, or until the cake is fully baked through and no longer too moist in the center.
Allow the cake to cool slightly before serving.
