Ingredients

  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 1 medium ripe avocado

Directions

Preheat your oven to 375°F.

Place the avocado in a bowl and mash it thoroughly until smooth. Add the egg and mix until fully combined.

Stir in the shredded mozzarella and mix well.

Using medium-sized baking rings, divide the mixture into portions. If you don't have baking rings, line a baking sheet with parchment paper and shape the mixture into flat rounds about the size of a small pita or sandwich roll.

Bake for about 25 to 30 minutes, or until the tops are golden brown and firm.

Allow the avocado toasts to cool slightly before removing them from the baking sheet.
