Got Lemons About to Go Bad? Make This Cozy Caraway-Lemon Chicken

Most of us think of lemons as something to squeeze over a salad or add to a glass of water. But when they're roasted slowly with chicken, onions, garlic, and fragrant spices, they become something entirely different.
The lemons soften, sweeten, and melt into the sauce, creating a rich, comforting dish packed with deep flavor. If you have a few lemons sitting on the counter that are a little past their prime, this is the perfect recipe to put them to good use.
The secret ingredient here is caraway, a warm, earthy spice that gives the dish its distinctive character and pairs beautifully with the brightness of the lemons and the sweetness of the onions.
Ingredients
- 8 chicken pieces (drumsticks, thighs, or boneless chicken thighs)
- 2 to 3 very soft lemons, scrubbed well, thinly sliced, and seeded
- 2 large onions, sliced into strips
- 1 whole head garlic, separated into cloves
- 1/2 cup olive oil
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1/2 teaspoon caraway seeds or ground caraway (or more, to taste)
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- Water, as needed
Instructions
Prepare the Flavor Base
Preheat the oven to 350°F (180°C).
For even deeper flavor, heat a little olive oil in a large skillet and sauté the onions and garlic until softened. Add the caraway and cook for about 30 seconds, just until fragrant. This simple step helps release the spice's full aroma and gives the dish extra depth.
Assemble the Dish
Arrange the chicken pieces in a large baking dish or roasting pan.
Scatter the onions, lemon slices, and garlic cloves around and over the chicken.
Drizzle with the olive oil and season with the paprika, turmeric, caraway, rosemary, salt, and black pepper.
Pour in enough water to come about halfway up the chicken.
Bake
Cover tightly and bake for about 1½ hours, or until the chicken is tender and fully cooked.
Remove the cover during the final 20 minutes of cooking to allow the chicken to develop a beautiful golden color and the sauce to reduce slightly.

Serve hot with rice, couscous, mashed potatoes, or plenty of fresh bread to soak up the flavorful sauce.
