Refreshing Summer Rolls with Sweet Chilli Sauce

Light, colorful, and packed with fresh vegetables, these summer rolls are a delicious alternative to traditional fried appetizers. Wrapped in delicate rice paper and served with a sweet and savory dipping sauce, they're perfect as a light lunch, appetizer, or healthy snack.
The combination of tender vegetables, sesame oil, and a flavorful dipping sauce creates a refreshing dish that's as beautiful as it is satisfying.
Ingredients
For the Rice Paper Rolls
- 20 rice paper sheets
- 1 tbsp olive oil
For the Filling
- 5 tbsp basic stir-fry sauce
- 3 zucchini, cut into thin strips
- 3 garlic cloves, crushed
- 2 carrots, cut into thin matchsticks
- 1 tbsp olive oil
- 1 tsp sesame oil
- ¼ head green cabbage, thinly sliced
For the Dipping Sauce
- 2 tbsp silan (date syrup)
- 1 tbsp sweet chili sauce
- ¼ cup soy sauce
- A little fresh ginger, grated
- A few chives, finely chopped
Directions
Prepare the Filling
- Cut the zucchini, carrots, and cabbage into thin strips.
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and sauté for a few seconds until fragrant.
- Add the carrots and cook for about 1 minute.
- Stir in the cabbage and zucchini.
- Add the stir-fry sauce and sesame oil, mixing well to coat the vegetables.
- Cover the skillet and cook until the vegetables are tender but still slightly crisp.
- Remove from the heat and allow the filling to cool completely.
Prepare the Rice Paper Rolls
- Fill a large shallow bowl with lukewarm water.
- Dip one rice paper sheet into the water for about 20 seconds, just until it becomes soft and flexible.
- Transfer the softened sheet to a clean kitchen towel or wooden work surface.
- Place about 1 tablespoon of the vegetable filling on the lower third of the wrapper.
- Fold the bottom edge over the filling, then fold in the sides and continue rolling tightly to create a neat roll.
- Repeat with the remaining rice paper sheets and filling.
Make the Dipping Sauce
In a small bowl, whisk together the silan, sweet chili sauce, soy sauce, grated ginger, and chopped chives until smooth.
Serve
Arrange the rice paper rolls on a serving platter and serve alongside the dipping sauce.
For extra flavor, drizzle a small amount of the sauce over the rolls just before serving.
