Authentic Moroccan Harira Soup: A Hearty, Flavor-Packed Recipe for Every Season

Harira is one of the most comforting soups to enjoy during the colder months. Rich, filling, and packed with vegetables, fresh herbs, and legumes, this classic Moroccan favorite has long since moved beyond Grandma’s kitchen and can easily be prepared at home. The result is an authentic, flavorful soup with a wonderful texture and deep, satisfying taste. While Harira is often made with meat or chicken, this version is dairy-free and vegetarian, making it perfect for any meal of the day.

Ingredients

  • 4 tablespoons olive oil

  • 2 large onions, finely chopped

  • 2 medium carrots, peeled and sliced

  • 4 garlic cloves, sliced

  • 2 celery stalks, chopped

  • 4 large tomatoes, finely chopped and peeled

  • 1½ cups chickpeas, soaked overnight or canned

  • 1 cup green or black lentils, soaked

  • 1½ liters (about 6 cups) water

  • ¼ teaspoon turmeric

  • ½ teaspoon ground cumin

  • 1 tablespoon fine salt

  • ½ teaspoon ground black pepper

  • 1 cup short, thin noodles

  • ½ bunch fresh parsley, chopped

  • ½ bunch fresh cilantro, chopped

Advance Preparation

For best results, soak the chickpeas overnight in water with 1 teaspoon baking soda.

Soak the lentils in water for about 30 minutes before cooking.

Instructions

  1. Heat the olive oil in a large pot and sauté the onions until soft and translucent.

  2. Add the carrots, stir, and cook for 2–3 minutes.

  3. Add the garlic, celery, parsley, and cilantro. Stir and cook for about 1 minute, taking care not to burn the garlic.

  4. Add the tomatoes, chickpeas, lentils, water, turmeric, cumin, salt, and black pepper.

  5. Stir well, bring to a boil, then reduce the heat.

  6. Cover the pot and simmer for approximately 30 minutes.

  7. Once the vegetables and legumes are tender, you may add 2 tablespoons cornstarch or sifted flour (optional) to thicken the soup.

  8. Add the noodles and continue cooking uncovered for another 10–15 minutes, until the noodles are tender.

Serving Suggestion

For an extra burst of flavor, add a squeeze of fresh lemon juice just before serving.
