This nourishing Asian-inspired soup combines hearty pearl barley with fresh vegetables, ginger, soy sauce, and sesame for a comforting meal full of flavor. The addition of miso creates extra depth and richness, while spinach or bok choy adds freshness and color.
Ingredients (Serves 4)
1 cup pearl barley, soaked in water for 1 hour and drained
1 tablespoon sesame oil (or regular cooking oil)
1 small onion, chopped
2 garlic cloves, crushed
1 tablespoon fresh ginger, grated
1 large carrot, thinly sliced
1 red bell pepper, cut into strips
6 cups vegetable broth or water
3 tablespoons soy sauce (or to taste)
1 tablespoon miso paste (optional, but highly recommended)
A handful of fresh spinach leaves or bok choy (for a more authentic version)
2 green onions, sliced
1 tablespoon toasted sesame seeds, for garnish
Fresh cilantro, for garnish (optional)
Instructions
Prepare the Flavor Base
Heat the sesame oil in a large pot over medium heat.
Add the onion, garlic, and grated ginger.
Sauté for 3–4 minutes, until softened and fragrant.
Cook the Barley
Add the drained pearl barley to the pot.
Stir and lightly toast it with the onion mixture for a few minutes to enhance its flavor.
Add the Broth and Seasonings
Pour in the vegetable broth or water.
Add the soy sauce and miso paste, stirring until well combined.
Bring the soup to a boil.
Reduce the heat and simmer for about 30 minutes.
Add the Vegetables
Add the sliced carrot and red bell pepper.
Continue cooking until the vegetables are tender.
During the last few minutes of cooking, add the spinach or bok choy so they retain their vibrant color and freshness.
Garnish and Serve
Remove the soup from the heat and ladle into serving bowls.
Garnish each bowl with sliced green onions, toasted sesame seeds, and fresh cilantro, if desired.
Serve hot and enjoy a wholesome, aromatic soup packed with vegetables, whole grains, and Asian-inspired flavors.
