1 cup quinoa, rinsed
1½ cups boiling water

3–4 tablespoons olive oil
Salt and black pepper, to taste
Instructions
Cook the Quinoa
Place the rinsed quinoa in a saucepan with the boiling water.
Cook until all the water has been absorbed, about 12 minutes.
Fluff the quinoa with a fork to separate the grains and prevent clumping.
Allow it to cool completely.
Prepare the Salad
Transfer the cooled quinoa to a large bowl.
Add the parsley, mint, tomatoes, cucumber, and red onion.
Mix gently to combine.
Dress the Salad
Add the lemon juice and olive oil.
Season with salt and black pepper to taste.
Toss gently until everything is evenly coated.
