Easy Homemade Focaccia Bread: Soft, Golden, and Loaded with Flavor

The aroma of freshly baked bread coming out of the oven is one of those irresistible scents that instantly fills a home with warmth and comfort. A good focaccia doesn't require special baking skills — just a little patience, quality olive oil, and a love for homemade dough. It's perfect for a light meal, spontaneous entertaining, or simply when you're craving something warm and satisfying alongside a salad or bowl of soup.
This recipe creates a focaccia that is soft and fluffy on the inside, golden and crisp on the outside, and, most importantly, incredibly difficult to stop eating.
Ingredients
500 g (1 lb) bread flour or sifted all-purpose flour
1½ tablespoons dry yeast
1 teaspoon sugar
1½ cups lukewarm water
3 tablespoons olive oil
1 teaspoon salt
For Topping
Olive oil
Coarse sea salt
Optional Focaccia Toppings
Vegetables
Thinly sliced red onion
Thinly sliced mushrooms
Black or green olives
Halved cherry tomatoes
Sun-dried tomatoes
Diced bell pepper
Crushed garlic
Cheeses
Cubed Bulgarian cheese (feta-style cheese)
Grated yellow cheese or mozzarella
Crumbled Parmesan
Sliced fresh mozzarella balls
Note: If using grated mozzarella or yellow cheese, it's best to add it about 10 minutes into the baking time to prevent overcooking.

Rosemary
Basil
Za’atar
Oregano
(Fresh or dried herbs may be used.)
Instructions
Prepare the Dough
In the bowl of a stand mixer fitted with a dough hook, combine the flour, yeast, and sugar.
Add the water and knead for about 2 minutes on medium speed until a rough dough forms.
Add the olive oil and continue kneading for another 5 minutes.
Sprinkle the salt evenly over the dough and knead for an additional 3 minutes, until the dough is smooth, elastic, and easy to handle.
First Rise
Lightly grease the mixing bowl.
Place the dough inside, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape the Focaccias
Divide the dough into 4 equal portions.
Roll or stretch each piece into an oval shape.
Second Rise
Line a large baking sheet with parchment paper and lightly grease it.
Place the shaped dough on the tray.
Cover and allow the dough to rise for another 15 minutes.
Add Toppings
Preheat the oven to 200°C (400°F), or 180°C (350°F) if using a particularly powerful oven.
Using your fingertips, press small dimples into the surface of each focaccia.
Drizzle about 1½ tablespoons of olive oil over each one.
Sprinkle with coarse salt.
Add your preferred toppings and herbs.
Bake
Bake for approximately 20 minutes, or until the focaccias are beautifully golden.
Be sure the oven is fully preheated before baking.
Final Touch
As soon as the focaccias come out of the oven, drizzle each one with an additional tablespoon of olive oil while still hot.
