Amsterdam Cookies: The Gooey Chocolate Treat Everyone Loves

Soft and Gooey Amsterdam Cookies

Ingredients

  • 7 ounces (200 grams) soft butter

  • 1 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all purpose flour, sifted

  • 1/2 cup high quality cocoa powder

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • Pinch of salt

  • 7 ounces (200 grams) dark chocolate chips

  • White chocolate cubes, for filling

Directions

Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.

In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

Add the eggs and vanilla extract and mix until fully incorporated.

In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix just until a smooth dough forms. Do not overmix.

Fold in the dark chocolate chips.

Take a portion of dough and flatten it slightly in your hand. Place a cube of white chocolate in the center, then carefully wrap the dough around it and roll into a ball, making sure the filling is completely enclosed.

Place the dough balls on the prepared baking sheet, leaving space between each cookie.

Bake for 10 to 12 minutes. The cookies should still appear slightly soft in the center when removed from the oven. They will continue to set as they cool.

Allow the cookies to rest for several minutes before serving, if you can resist. The warm, melted white chocolate center is worth the wait.

Tips for Extra Thick Bakery Style Cookies

For even thicker and softer cookies, refrigerate the dough balls for about 30 minutes before baking.
