Mustard Curry Baked Chicken Breast

Tender chicken breasts marinated in Dijon mustard, curry, olive oil, and spices, then baked to perfection

Ingredients

  • 4 chicken breast fillets

  • 3 tablespoons mustard (preferably Dijon mustard)

  • 2 tablespoons mayonnaise

  • 2 tablespoons olive oil

  • Ground curry powder, to taste

  • Crushed chili flakes, to taste

  • Salt and black pepper, to taste

Instructions

  1. In a bowl, combine the mustard, mayonnaise, olive oil, curry powder, chili flakes, salt, and pepper.

  2. Coat the chicken breasts thoroughly with the marinade.

  3. Place the chicken and any remaining marinade in a bowl, cover, and refrigerate for about 30 minutes to allow the flavors to absorb.

  4. Line a baking dish with parchment paper and arrange the chicken breasts in the dish. Pour any remaining marinade over the chicken.

  5. Cover the dish tightly with aluminum foil.

  6. Bake in a preheated oven at 200°C (400°F) for 40 minutes, or until the chicken is fully cooked and tender.

Serving Suggestion

Serve with roasted vegetables, rice, couscous, or a fresh green salad for an easy and flavorful meal.
