Chicken Drumsticks with Green Beans in Tomato Sauce
Ingredients (Serves 5–6)
6–7 chicken drumsticks (with or without skin, according to preference)
1 package (600g / 21 oz) frozen green beans
2 onions, chopped
2 jars or cans pasta sauce or shakshuka sauce
Olive oil or canola oil
½ teaspoon garlic powder
1 tablespoon ground cumin
A pinch of black pepper
Salt, to taste
Instructions
In a wide pot, such as a fish pot or large sauté pan, heat a little olive oil or canola oil and sauté the onions until golden.
Add the tomato sauce and 2 full cups of water. Stir well and bring to a boil over high heat. The sauce should be thick but still pourable — not watery, but not paste-like either.
Add the frozen green beans, garlic powder, cumin, salt, and black pepper. Stir to combine.
Arrange the chicken drumsticks on top of the sauce in a circular pattern.
Using a spoon, ladle some of the sauce over the drumsticks.
Cover the pot and bring it back to a boil (the frozen beans and chicken will cool the sauce).
Reduce the heat to low and simmer for about 1 hour.
Check occasionally to make sure there is enough liquid in the pot. If needed, add a little water — but don't overdo it.
Serving Suggestion
Serve hot with simple white rice. The rice soaks up the rich tomato sauce beautifully, making this a comforting, family-friendly meal that's sure to become a regular on your menu.
