Ingredients
14 ounces (400 grams) fusilli pasta
3 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon crushed garlic
1 teaspoon sweet paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground cardamom
2 tablespoons chopped fresh parsley
Directions
Preheat the oven to 400°F (200°C).
Cook the pasta according to the package directions until al dente. Drain well and allow it to dry slightly.
In a large bowl, combine the olive oil, cumin, coriander, garlic, paprika, salt, pepper, and cardamom.
Add the cooked pasta and toss until every piece is evenly coated with the seasoning mixture.
Spread the pasta in a single layer on a parchment-lined baking sheet.
Bake for 20 to 25 minutes, stirring occasionally, until the pasta is crispy and golden brown.
Remove from the oven and let cool for a few minutes.
Sprinkle with fresh parsley and serve.
