Few dishes are as comforting as a slow cooked pot of tender beef simmered with vegetables and rich flavor. This hearty recipe combines juicy beef, tomatoes, potatoes, beans, and beer to create a deeply satisfying meal that tastes like it has been cooking all day, because it has.

The beer helps tenderize the meat while adding depth and richness to the sauce, resulting in a warming dish that's perfect for family dinners, Shabbat meals, or any time you're craving classic comfort food.

Slow Cooked Beef and Bean Stew With Beer

Ingredients

  • 2.2 pounds boneless beef neck, cut into large chunks

  • 17 ounces beer, any variety

  • 7 tomatoes

  • 4 tablespoons oil

  • 3 onions

  • 3 potatoes

  • 2 cups cooked beans

  • Salt, to taste

  • Black pepper, to taste

Directions

Heat the oil in a large heavy bottomed pot over medium high heat.

Add the beef pieces and sear for 2 to 3 minutes on each side, until nicely browned. Transfer the beef to a plate and set aside.

Peel and chop the onions. Add them to the same pot and sauté for about 10 minutes, stirring occasionally, until softened and lightly golden.

Pour in the beer and use a wooden spoon to scrape up any browned bits from the bottom of the pot. These add tremendous flavor to the finished dish.

Return the beef to the pot.

Roughly chop the tomatoes and cut the potatoes into medium cubes. Add them to the pot along with the cooked beans.

Season with salt and black pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for approximately 2 1/2 hours.

Check the pot occasionally during cooking. If too much liquid evaporates, add a little boiling water as needed.

The stew is ready when the beef is fork tender and easily pulls apart.

Serve hot and enjoy the rich, savory flavors of this hearty homemade meal.
