Healthy Baked Zucchini and Pumpkin Fritters: An Easy Family-Friendly Recipe

Ingredients

  • 2 medium zucchini, grated

  • 1 cup grated pumpkin (or butternut squash)

  • 1 egg

  • 2–3 tablespoons oat flour, whole wheat flour, or spelt flour

  • 2 tablespoons whole wheat breadcrumbs (optional, depending on texture)

  • 2 tablespoons olive oil

  • 1 garlic clove, crushed (optional)

  • A handful of chopped parsley or dill

  • ½ teaspoon salt

  • A pinch of black pepper

  • 1 teaspoon sweet paprika (optional)

Instructions

  1. Grate the zucchini and pumpkin using the large holes of a box grater.

  2. Thoroughly squeeze out the excess liquid using your hands or a fine mesh strainer. This step is essential for keeping the fritters from falling apart.

  3. Transfer the drained vegetables to a bowl and add the egg, olive oil, garlic, herbs, and seasonings. Mix well.

  4. Gradually add the flour and breadcrumbs until you have a soft mixture that is easy to shape.

  5. Form evenly sized fritters and place them on a baking sheet lined with parchment paper and lightly brushed with oil.

  6. Flatten each fritter slightly.

  7. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, until golden brown. For even browning, gently flip them halfway through baking.

  • For a dairy version, add a small amount of grated cheese to the mixture.
