Purim Seudah Recipe: Slow-Cooked Beef Stew with Silan and Red Wine

The Purim seudah (festive meal) is far more than just a celebratory feast. Jewish tradition teaches that it serves as a spiritual rectification for the feast of King Ahasuerus. Our sages explain that Ahasuerus's banquet was not merely a royal celebration — it was also an act of mockery toward the destruction of the Holy Temple, as he used sacred Temple vessels during the feast, desecrating them in the process.
In contrast, the Purim seudah is a holy feast, filled with authentic Jewish joy and gratitude to God for the miracle of Purim. It is a celebration of spiritual happiness rather than material excess.

Sweet and Savory Beef Stew with Silan and Red Wine
Ingredients (Serves Approximately 10)
3 kg (6.5 lbs) beef chuck or another slow-cooking cut
4 large onions, sliced into strips
2 large sweet potatoes, cut into medium cubes
½ large butternut squash, cubed
1 head of garlic, sliced crosswise
⅓ cup canola oil
2 tablespoons sweet paprika
¾ teaspoon black pepper
¾ tablespoon cumin
2–3 bay leaves
4–6 whole allspice berries
½ cup dry red wine
⅓ cup silan (date syrup), or up to ½ cup for a sweeter flavor
1½ cups water

Instructions
1. Brown the Meat
Heat the oil in a large pot and sear the beef on all sides until nicely browned.
Remove the meat and set it aside on a large plate. This is probably the most demanding step of the entire recipe.
2. Caramelize the Onions
Using the same pot, add the onions and cook over low heat until they become soft and lightly caramelized.
Add the garlic and cook for about one minute, stirring constantly.
3. Add the Vegetables and Seasonings
Add the sweet potatoes and butternut squash and stir well.
Mix in the paprika, cumin, and black pepper.
4. Deglaze with Wine
Pour in the red wine and allow it to simmer for about 3 minutes.
5. Slow Cook
Return the beef to the pot.
Add the silan and water.
Bring everything to a boil, then reduce the heat to low.
Add the bay leaves and allspice berries, cover, and cook for at least 4 hours.
If the meat is not yet fork-tender, continue cooking until it becomes soft enough to fall apart easily.
6. Finish the Sauce
Taste and adjust the seasoning if needed.
Remove the lid and simmer for an additional 10–15 minutes to reduce and thicken the sauce.
7. Serve
Transfer the stew to a large serving platter and serve alongside fluffy white rice.
