Ingredients

  • 5 chicken leg quarters

  • 2 tablespoons oil

  • A handful of white raisins

  • ½ cup prepared plum sauce

  • ½ teaspoon turmeric

  • Salt and black pepper, to taste

Instructions

  1. In a bowl, mix together all the ingredients except the chicken.

  2. Arrange the chicken leg quarters in a baking dish.

  3. Pour the sauce mixture evenly over the chicken, coating it well.

  4. Place the entire baking dish inside an oven roasting bag (such as a turkey or cooking bag) and seal it according to the package instructions.

  5. Pierce the bag in two places to allow steam to escape.

  6. Bake in a preheated oven at 200°C (400°F) for 1 hour.

  7. Remove the roasting bag, reduce the oven temperature to 160°C (320°F), and continue baking until the chicken is golden brown and nicely caramelized.

  8. For garnish, sprinkle sesame seeds over the chicken after baking, if desired.

Serve hot and enjoy!
