Maple Coffee Cake with Chocolate Chips and Coffee Glaze
This moist and flavorful maple coffee cake combines orange juice, rich coffee notes, and a sweet chocolate chip topping, finished with a smooth coffee glaze for the perfect homemade dessert

5 eggs, separated 2½ cups flour 1 cup sugar, divided ¾ cup oil 1 cup orange juice ¼ cup maple syrup 1 teaspoon instant coffee 1 packet baking powder (about 2 teaspoons) 1 packet vanilla sugar (or 1 teaspoon vanilla extract) ¼ cup brown sugar ¼ cup chocolate chips 100 grams (about ¾ cup) powdered sugar 2 tablespoons oil Slightly less than ¼ cup boiling water 1 teaspoon instant coffee Separate the eggs into whites and yolks. To the egg yolks, add the following ingredients in order: Baking powder Vanilla sugar Oil ½ cup sugar (reserve the remaining ½ cup for the egg whites) Maple syrup Instant coffee Orange juice Flour Mix well until a smooth batter forms. In a separate bowl, beat the egg whites with the remaining ½ cup sugar until stiff peaks form. Gently fold the beaten egg whites into the batter. Pour the batter into a greased baking pan and bake in a preheated moderate oven (about 350°F / 180°C). After approximately 15 minutes of baking, remove the cake briefly and sprinkle the top with the brown sugar and chocolate chips. Return the cake to the oven and continue baking for about 30 more minutes, or until a toothpick inserted into the center comes out clean. Mix together the powdered sugar, oil, boiling water, and instant coffee until smooth. Once the cake has completely cooled, pour the glaze evenly over the top.Ingredients
