Ingredients

  • 4 cups flour

  • 2 heaping tablespoons yeast (40 grams, preferably fresh yeast)

  • 3 eggs plus 1 egg yolk

  • ¼ cup lukewarm milk (use water for a dairy-free version)

  • ¼ cup oil

  • 1 heaping teaspoon vanilla extract or 1 packet vanilla sugar

  • ½ cup sugar

  • ½ teaspoon salt

Instructions

  1. Place all the ingredients in the bowl of a stand mixer, except for the milk, oil, and salt.

  2. Using the paddle attachment, mix on low speed for about 2 minutes while gradually adding the milk and oil.

  3. Switch to the dough hook and knead on medium speed for 6–8 minutes.

  4. Transfer the dough to a lightly floured work surface (avoid using too much flour) and shape it into a smooth ball without cracks.

  5. Place the dough ball in a lightly floured bowl and let it rise for 1 hour. Then refrigerate for an additional hour.

Shaping the Doughnuts

Method 1

  1. Roll out the dough to a thickness of about 1.5 cm (½ inch).

  2. Cut out circles using a drinking glass or round cutter.

  3. Arrange on a greased baking sheet and cover with a clean cloth until doubled in size.

Method 2

  1. Cut off pieces of dough according to your desired doughnut size.

  2. Roll each piece into a smooth ball.

  3. Place on a greased baking sheet and cover with a clean cloth until doubled in size.

Frying

  1. Heat a deep pot of oil to about 160°C (320°F), or until a wooden spoon placed in the oil creates plenty of bubbles around it.

  2. Carefully place the risen doughnuts into the hot oil.

  3. Fry until each side is beautifully golden brown.

  4. Remove and drain on paper towels.

Finishing Touches

  • Dust generously with powdered sugar.

  • Using a piping bag, fill each doughnut with your favorite jam, chocolate spread, dulce de leche, or any filling of your choice.
