I love sweet potatoes. Their naturally sweet flavor, creamy texture, and impressive nutritional profile make them one of the greatest gifts in the kitchen. Sweet potatoes can be used in almost anything, from salads and casseroles to fritters, patties, cakes, and even rich, satisfying desserts like this mousse.

Although sweet potatoes are often compared to regular potatoes, they are far richer in fiber and essential nutrients. While they do contain natural sugars, they have a relatively low glycemic index because they contain resistant starch, which helps promote a more gradual rise in blood sugar levels.

A 100 gram serving of sweet potato contains only about 90 calories. Sweet potatoes are also packed with beneficial phytochemicals, natural plant compounds that help protect against environmental damage and may contribute to disease prevention, including certain types of cancer.

Sweet Potato Chocolate Mousse

Ingredients

  • 1 medium sweet potato

  • 4 tablespoons natural sugar-free date syrup (silan)

  • 4 tablespoons peanut butter or almond butter

  • 4 pitted dates

  • 2 tablespoons carob powder or high-quality cocoa powder

  • 2 tablespoons water

Instructions

  1. Wash the sweet potato and boil it whole, with the skin on, until tender.

  2. Cool the sweet potato under running water and peel it by hand.

  3. Place all the ingredients in a food processor.

  4. Blend until completely smooth and creamy.

  5. Scoop the mousse into serving glasses using an ice cream scoop or spoon.

  6. Garnish with a nut of your choice.

  7. Refrigerate for at least 4 hours before serving.

Turn It Into a Cake

This same recipe can also be baked into a delicious cake.

Additional Ingredient

  • 1 teaspoon baking powder (preferably aluminum-free)

Instructions

  1. During the mixing stage, add the baking powder to the batter.

  2. Pour the mixture into a loaf pan.

  3. Bake for approximately 40 minutes at 160°C (320°F).

  4. Allow the cake to cool completely.

  5. Refrigerate for at least 4 hours before serving.

The flavor becomes even richer and more delicious after chilling.
